Abstract

Analyzing the Mercury Level between Rice and Oatmeal Infant Cereal

Mercury is a toxic heavy metal, which is known to cause health issues if exposed. Some recognized factors that are caused by mercury toxicity are changes in the central nervous system, cardiovascular system, and potentially lead to fatigue, behavioral changes, hearing loss, and even death. Because these systems are still developing, infants are more prone to be affected by mercury. A recent study based in Spain has shown that rice infant cereals contain more mercury than other types of infant cereal. In this study, we present results of different types of infant cereal in the United States.

Mercury was analyzed by atomic absorption spectroscopy, using the thermal decomposition followed by amalgamation method. We saw that oatmeal based infant cereal had an average of 0.558 ± (0.526) ppb mercury concentration, while the rice based cereal had an average of 1.909 ± (0.372) ppb. These results are compared to measurements from other studies. We will also discuss the implications of these results.
